Broken rice (Vietnamese: Cơm tấm), a traditional Vietnamese dish, has evolved from being a byproduct of the rice milling process to becoming a signature street food in Ho Chi Minh City. It features broken rice grains, which were once considered imperfect and discarded but are now cherished for their unique texture.

When served, cơm tấm is adorned with a variety of toppings such as fried eggs, shredded pork skin, grilled pork chops, or deep-fried fish patties. Lime wedges, chopped spring onions, and mint serve as common garnishes, while sliced tomatoes, cucumbers, pickled vegetables, and dipping sauces are served on the side.
